What are you feeding your kids?

The government continuously adds new regulations on what restaurants are allowed to cook. We as chefs aren’t allowed to cook with trans-fats. We have restrictions on serving  foie gras, a specialty in other countries. Why?  Do you think these are the things that are making society unhealthy or our kids obese? The government should try to focus regulations on things that matter.

What else does the government think they have the right to Impose?

New York State Assemblyman Felix Ortiz has introduced a bill that would outright ban the use of any salt in the preparation of restaurant food. If passed, the bill would result in fines of up to $1,000 for each addition of salt by restaurant staff, whether before, during or after cooking. Yes, you understood this bill correctly… chefs, bakers or even cooks can not use salt in the kitchen. Mother Nature Attacks Again!

Most people don’t realize the effect that the weather has in the restaurant world. I am not referring to the dramatic loss of business during every snow storm, but more the cost of doing business. With the excessive rain, snow and earthquakes, restaurants are going to be facing a dramatic increase in food cost. Take the biggest and most tragic event, the massive earthquake in Chile. Most people don’t realize that Chili was the primary source of plums, peaches, nectarines, and grapes during the winter months. Chile is also the chief supplier of Salmon all year long. In 2009, we imported $1.5 billion worth of fruits and fruit based products, including frozen juice, followed by fish and shellfish at $737 million, and wine and related products at $275 million.
