4 chicken breast
1 tablespoon salt and pepper
1/4 cup flour
1/2 cup olive oil
2 apples -- peeled and cubed
1/2 cup apple juice
1 shot metaxa -- conjac
1 teaspoon sugar
Season chicken with salt and pepper then dredge in flour. Saute in olive oil. When you turn the chicken the first time add apples.
When chicken is cooked Drain extra oil and add apple juice sugar and Metaxa. Reduce sauce to a thin syrup and plate.
