kalamata olive -- pitted & chopped
to taste

Sauté Garlic and onion in a sauce pot with the vegetable oil. Saute until onion is transparent. Stir in rice.

Add 1/2 the water and stir constantly until all water is absorbed. Repeat this step with the remaining water.

Remove rice from stove.

Stir in remaining ingredients and plate in a decorative bowl.
